Artichokes in Creamy Lemon Sauce This recipe looks & tastes good and takes less than 10 minutes to prepare

Ingredients
2/3 cup Mayonnaise
1/4 stick of butter
the juice from 1/2 a lemon
1/2 teaspoon salt
1 can of artichoke hearts drained (packed in water)
1/4 cup pine nuts or slivered almonds
1/4 cup Parmesan cheese
Method
Preheat oven to 400°F (200° C)
Combine first 4 ingredients in a small saucepan over low heat and whisk until smooth. Do not boil. Arrange artichokes in shallow baking dish in a single layer. Pour sauce over top of artichokes. Sprinkle with nuts & cheese. Bake until bubbly and golden...about 12 minutes. This recipe serves 4 but can be doubled or tripled.
