Carrot Cake

Ingredients


2 cups white granulated sugar
1 1/4 cup vegetable oil
3 eggs
Add: 2 cups raw grated carrots
1 8 oz (250gm) can crushed pineapple (drained)
*If you can't find crushed pineapple you can use pineapple chunks and chop the chunks into smaller bits
1 cup walnuts (optional)
1 tsp vanilla (liquid)
Sift & add:
2 1/2 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1 tsp salt



Method


Bake in buttered & floured pan 9x13 oblong baking pan for 45 minutes at 350° F (180° C)

Frosting:
1/2 cup of butter (125gm ) at room temperature
1 tsp vanilla (liquid)
1 8 oz (250 gm) package of cream cheese at room temperature
2 cups powdered sugar
Blend all of the above until creamy, spread mixture on cake after it is no longer warm
