Chocolate Birthday Cake
an easy favorite at our home

Ingredients


2 cups (500gm) white granulated sugar
1 3/4 cups all purpose flour
3/4 cocoa (use a good quality brand)
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder
1 teaspoon salt

2 eggs
1 cup of milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water



Method


Heat oven to 350°f (180°C) Butter & flour 2 round 9 inch pans or a rectangular pan 13x9. In a large mixing bowl combine dry ingredients. Add eggs, milk, oil, and vanilla. Use mixer at medium speed for 2 minutes (or mix for a few minutes vigorously by hand) . Remove from mixer and stir in boiling water (your batter will be thin). Pour cake batter into prepared pans. Bake 30-35 minutes for round pans or 35640 for rectangular pan or until toothpick test in center comes out "clean". Cool cake in round pans for about 10 minutes and then remove from pans & cool completely. Do not remove rectangular cake from pan. Frost with butter cream frosting see recipe below.

One Bowl Chocolate Butter Cream Frosting:
6 tablespoons of butter or margarine softened to room temperature.
Cocoa 1/3 cup for light flavor
1/2 cup for medium flavor
3/4 cup for dark flavor
2 2/3 cups confectioners sugar (also called powdered sugar or 10x sugar)
1/3 cup milk
1 tsp vanilla extract
In a small bowl cream butter, add cocoa & sugar alternately with milk beat (with an electric mixer or by hand) the mixture to spreading consistency. You may need to add additional milk..add slowly to avoid over doing it. When you have the consistency you want add the vanilla. Makes about 2 cups of frosting.
Tip: Make sure that the cake is cool before you frost. I find it easiest to spread frosting with a dinner knife... then decorate to your heart's content :)
