5 large cucumbers
1 cup sour cream
1 cup plain yogurt
2-3 cloves crushed garlic
about 8 mint leaves (best with fresh mint)
1/2 cup thinly sliced red onion (does not work well with any other variety)
1/4 cup chopped coriander or flat parsley
1/4 cup chives
1-2 teaspoons of honey (optional)
1 teaspoon salt
Freshly ground black pepper
2 tablespoons fresh dill, chopped (or 2 tsp dried)
1 cup chopped toasted pine nuts or walnuts
Method
Wash the cucumbers and slice them into medium thickness circles. Combine all of the ingredients except the nuts and mix well.Chill thoroughly in a sealed container. Garnish with nuts before sering.
