500 gm of chick peas (can or jar)
2 medium cloves of garlic, pressed
1 1/2 teaspoons salt
Dash of soy sauce
Juice from 2 medium sized lemons
3/4 cup tahini
1/4 cup finely minced parsley or coriander (or a combination)
Freshly ground black pepper to taste
Dash of cayenne pepper (use a bit more if you like it spicy)
1/4 cup minced scallions/green onions (use the green part as well as the white)
Method
Mash the chick peas to a thick mush. If you have a food processor you can use it if not a potato masher works . Combine all of the ingredients. Chill thoroughly. Check the seasonings. Depending on your taste add extra garlic, soy sauce, or tahini.
