1 unbaked 9 inch pie shell
250 gm smoked salmon, chopped
1 cup grated Swiss cheese
4 eggs
3/4 cup cooking cream
1/2 cup milk
1 generous tablespoon dill (either fresh or dried is fine)
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
Method
Preheat oven to 200°C (400°F)
Distribute salmon all over the bottom of the pastry shell. Sprinkle the cheese over top of the salmon. Mix all the other ingredients together well and pour over the cheese.
Bake for 15 minutes then reduce the oven temperature to 180°C (350°F) and continue baking about 15-20 minutes more. The top of the quiche & the pastry crust should be golden brown.
