Spinach Rice Dish
Serves 6

Ingredients

4 cups of cooked rice (approx 2 cups raw rice = 4 cups cooked) I like to use brown rice.
1 kilo of fresh spinach, chopped
1 cup chopped onions
500 grams of fresh white mushrooms, sliced
3-4 cloves of fresh garlic, crushed
75 grams of butter
4 eggs, beaten
1 cup of milk
500 grams of grated cheese of your choice, Cheddar or Gouda is nice
1/2 cup chopped parsley or coriander
2 tablespoons soy sauce
1 teaspoon salt
1/2 teaspoon of nutmeg
1/2 cup of pine nuts or sunflower seeds
a generous dash of cayenne pepper
paprika



Method

Sauté the onions & garlic in butter until clear. Add spinach & salt lightly. Cook for about 2 minutes.Combine this with all of the other ingredients except for the pine nuts & the paprika in a buttered casserole dish. Sprinkle the top of the mixture with the pine nuts & the paprika. Bake covered for about 30 minutes at 180°C (350°F)
