2 cups of tahini (you can buy authentic tahini in a health food store or a Greek or middle eastern grocery section...make sure you stir the tahini well to blend the oil on top before measuring it)
2 cups plain yogurt
2 medium cloves crushed garlic
The juice of 2 lemons
1/4 cup chopped coriander or flat parsley
1/4 cup chopped green onions
1 teaspoon of salt
1/2 teaspoon of cayenne pepper (use less if you don't want it spicy)
A generous dash of sweet paprika
1 teaspoon ground cumin
1 teaspoon soy saucev
sesame seeds
Method
Preheat oven to 350°F (180°C)
put everything in a food processor and blend well. If you don't have one mix well until smooth & creamy in texture. This sauce is good for a variety of things:it can be used as a salad dressing or served as a sauce poured over steamed or roasted vegetables (it is great with roasted eggplant). It can also be served as a dip with raw vegetables.
It can be served chilled or at room temperature. When ready to serve sprinkle sesame seeds over top.
